after-crisis:

When I worked at a non-profit that handled suicide prevention, I had access to the donation records. Each month, a specific man donated 15$ to our organization. It was like clockwork.. same day, same man, he had been doing this for over 4 years. It always seemed odd to me but I never questioned it… until I saw a note attached one month. "For Noah- Dad"

his donation was once his child’s allowance.

I can promise you, they would miss you for the rest of their lives.

Ingredients
Red Velvet Waffles:
125g (1/2 cup) Roasted Beet Puree (see this post for instructions)2 Large Organic Eggs4 packets Truvia1 tsp Vanilla Extract1/2 tsp Butter Flavor28g (1/4 cup) Coconut Flour21g (1 scoop) Chocolate Brown Rice Protein Powder (I used SunWarrior)1 tsp Double-Acting Baking Powder1 tsp White Vinegar
Cream Cheese Frosting:
2 tbs Organic Neufchâtel Cheese (1/3 Less Fat Cream Cheese), soft
2 tbs Plain, Nonfat Greek Yogurt
2 packets Truvia
Instructions
For the Waffles:
In a medium-sized bowl, whisk together the beet puree, eggs, Truvia, vanilla extract and butter flavor.
Whisk in the coconut flour.
Whisk in the brown rice protein powder.
Whisk in the baking powder.
Last, whisk in the vinegar.
Heat your rotating waffle iron (this is the one I use) to medium heat and spray with cooking spray.
When the iron is hot, scoop 1/2 of the batter onto the iron and spread out slightly. Cook for 1 minute, rotate the iron, then cook for 1 minute on the opposite side. Rotate the iron back upright and carefully remove the waffle (the waffles are slightly delicate, so it’s easiest to take out 1/4 of the waffle at a time using a large fork on either side to bring it out)
Spray the waffle iron with cooking spray and cook the next waffle.
For the Cream Cheese Frosting:
In a small bowl, whisk together the Neufchâtel, yogurt and Truvia. Scoop into a piping bag and drizzle over the waffles.
Serve with mini dark chocolate chips, strawberries, raspberries, or forks alone. Enjoy!
Notes

Don’t heat your waffle iron to a high heat otherwise the waffles will turn brown. These waffles are soft like pancakes, not crispy! :)
